Wine On Premise


  At Borrelli Wines Ltd., we try to make your wine making experience as worry free as possible. If you are an inexperienced winemaker, not properly equipped, or just don't have the time to rack, and filter your own wine, allow us to assist you in your winemaking endeavor. For an additional $55.00 facility charge per batch we will rack and filter your wine all while providing the proper environment and the facilities for winemaking. All you need to do is start the fermentation process by dropping the yeast into your batch and bottling your wine when it is finished. When your bottling appointment has arrived, you simply bring in your bottles or purchase them in store and use our automated equipment to bottle, cork, and accessorize your bottles with shrink caps and labels (including custom designs for a fee). Barrel Program


  Our On-Premise Barrel Program has been very successful and is for the sophisticated wine maker who wants a full bodied robust wine oaked in either an America or French barrel, if you desire. You can make wine from California Grapes or from Grape Juices to attain excellent quality and make wines that are full-bodied and bursting with flavour. This year you can also make wine from Juices imported from Italy such as Chianti or Amarone. Just follow the steps below and will make a great wine.


1 Choose the fresh grapes or grape juice that you want to ferment from our large assortment of inventory. This will depend on the sugar levels, the flavour of the grapes and the type of wine that you want to make. For example a preference for a light wine will require a grape or grape juice that contains approximately 22% to 23% sugar and will normally be fermented from 5 to 7 days.


2 You will be required to complete an on-premise contract. This contract will contain a price for the raw materials, a price for the services provided and the cost of any ingredients. An invoice is generated creating a tag number that will identify your batch and will be used to track your batch throughout the wine making process. The invoice is required to be paid in full prior to starting the wine making process.


3 All equipment is sterilized and the grapes are destemmed, ready for you to add yeast to the batch which starts the fermentation. If grape juice is used, it will be placed in a barrel or demijohn as per your request, ready for you to add yeast.


4 The batch will remain in fermentation until the specific gravity is below 1000. You may return to press the must (crushed grapes) and place the juice in a barrel or demijohns, the fermentation vessels. The wine will be racked periodically to remove sediment, allowing the wine to filter naturally. This may be completed 3 to 4 times before you can bottle your wine and may take up to one year.


5 Our clerk will call you when your wine is ready and will book a bottling appointment. If you have your own bottles, we recommend that to wash them at home, and sterilize them once you are at our on-premise facility. Once the wine is bottled it must be brought home.


6 Now it’s time to enjoy a great bottle of wine that you have handcrafted yourself, the traditional way.


Grape Season

 Every September marks the beginning of another grape season, a limited time when grapes imported directly from California are sold to customers who have a passion for winemaking. Buy them by the case or utilize our Italian-made grape presser (results in grape juice only) and destemmer (results in grape juice along with skins and seeds) and make 100% California grape juice. We also rent out electric grape grinders for those who wish to do it themselves at home. September looks promising, so keep an eye out for the first shipment and look for an updated price list and a grape varietal list on our website at the end of August.

  All of your winemaking needs can be met here at Borrelli Wines Ltd. With a large variety of wine kits, juices, equipment, accessories, ingredients and more, you will find everything you need to make a great wine that you can proudly call your own.

  We have equipped our wine making facility with two state of the art processing machines. A high volume grape destemmer and pneumatic grape press have been imported from Italy and are equipped with the latest wine making technology. Come visit us and make your wine on premise.

  We provide a custom labelling service; you can have a simple label with just lettering, a custom label with your own photo and design, or you can purchase 30 plain sheets and do it yourself! Custom labels require two weeks for development. Call today for prices!
